Indonesia's equatorial climate and its soil fertility provide ideal geographic conditions for cultivating cacao trees. This condition makes Indonesia have benefit to grow the superior varieties of cocoa. In Indonesian cocoa beans are classified into three categories: Forastero, Criollo and Trinitario.
Cocoa Forastero known as cacao Lindak or cacao curah (bulk cocoa). Forastero is the most widely used variety of cocoa comprising around ninety percent of cocoa's world production. Forastero originally came from Amazon but its have been cultivated in others countries such as Africa, Ecuador,Brazil and Indonesia. Cocoa Criollo known as fine flavoured. Cocoa Criollo originally came from Center America,South America,Caribbean Island,and Srilangka. In Indonesia this cacao located in East Java dan Central Java Recognized as the highest quality cocoa bean in the world, though it yields lower compared to other cocoa bean types. Because this plant is less resistant to disease it's makes rarer and more expensive.
Cocoa Trinitario known as the finest cocoa hybrid in the world. Cocoa Trinitario is crossbreed between the Forastero and Criollo so this why the Trinitario cocoa comes in many different varieties, highlighting a good basal cocoa flavor with a hint of fruity or floral taste. Trinitario is the predominant fine/flavour cocoa and is the most likely bean to be found in high-quality dark chocolate today. Cocoa Trinitario only located in Central America,Caribbean Island,Central Asia and Indonesia.
With this superior varieties puts Indonesia in a potentially fortunate position as the country is one of the largest producers and exporters of this commodity. Indonesia current primary competitive advantage lies in its ability to supply large quantities cocoa beans.(WP)
